Archons are immensely powerful beings from outside the boundaries of the World and Universe: much more powerful than mortals, but less powerful than Gods or Demi-Gods. Spirits of Light and Law, they generally do the All-Father's bidding, and many of them are aspected towards one particular concept (Strength, Peace, Grace, Justice, etc.). Basically, think of them as angels and you won't be far from the mark.

Gods are however big they decide they need to be at any given moment. Yes, the All-Father needed to be titanic when he fought the Dragon, but he also rested and recuperated in the palaces of the Elves (and got at least one of them pregnant, if legends are to be believed). Thurin tends to stay near Human size most of the time, but the rest of them manifest as best suits their needs in the moment.
